METHOD
- 01Gather and measure all the ingredients. Finely grate the apple.
- 02In a small saucepan, combine the sake, mirin, sugar, rice vinegar, soy sauce, miso, and katsuobushi. Bring to a gentle simmer and cook for 1.5 minutes, stirring to dissolve the sugar and miso.
- 03Strain the sauce through a fine-mesh sieve into a clean bowl or jar, discarding the solids.
- 04Stir in the toasted sesame seeds and the freshly grated apple. The sauce is ready to use immediately, but for the best flavor, cover and refrigerate for at least 12 hours or overnight to allow the flavors to meld together.
