METHOD

  1. 01Grate or finely chop the cucumber. Using a sieve or clean cloth, thoroughly squeeze out excess liquid from the cucumber. This is crucial for a thick tzatziki.
  2. 02Peel the garlic cloves. Place them on a cutting board, sprinkle with the sea salt, then use the flat side of a chef's knife to press and smash them into a paste. Finely chop the garlic paste.
  3. 03In a mixing bowl, combine the drained cucumber, pressed garlic, black pepper (to taste), sugar, 1 tablespoon of olive oil, chopped mint or parsley, and the thick plain yogurt. Mix well until all ingredients are thoroughly incorporated.
  4. 04Cover the tzatziki and refrigerate for at least 30 to 60 minutes before serving. This allows the flavors to meld beautifully. Before serving, give it a stir and drizzle with a little extra olive oil.
