METHOD
- 01Grate or finely chop the cucumber. Using a sieve or clean cloth, thoroughly squeeze out excess liquid from the cucumber. This is crucial for a thick tzatziki.
- 02Peel the garlic cloves. Place them on a cutting board, sprinkle with the sea salt, then use the flat side of a chef's knife to press and smash them into a paste. Finely chop the garlic paste.
- 03In a mixing bowl, combine the drained cucumber, pressed garlic, black pepper (to taste), sugar, 1 tablespoon of olive oil, chopped mint or parsley, and the thick plain yogurt. Mix well until all ingredients are thoroughly incorporated.
- 04Cover the tzatziki and refrigerate for at least 30 to 60 minutes before serving. This allows the flavors to meld beautifully. Before serving, give it a stir and drizzle with a little extra olive oil.
