- dried active yeast1 tsk
- sugar1 tsk
- warm water1 msk
- plain flour200 g
- black onion seeds1 tsk
- salt0.5 tsk
- baking powder0.5 tsk
- vegetable oil1 msk
- plain yoghurt2 msk
- milk2 msk
- melted butter, for brushing2 msk
METHOD
- 01In a small bowl, mix the yeast and sugar with one tablespoon of warm water to activate.
- 02Leave for 5 minutes in a warm place until frothy. Meanwhile, in a separate bowl, mix the flour, onion seeds, salt, and baking powder. When the yeast is frothy, add it to the flour mixture along with the oil and yoghurt.
- 03Knead the dough with slightly wet hands, folding as you go. If it feels a little dry, add some milk and continue to knead until it's nice and soft. Cover with cling film and leave it in a warm place to rise for at least 1 hour.
- 04Preheat your grill to its highest setting. Divide the risen dough into four equal balls and place them on a floured surface. Roll each into a teardrop shape about 0.5cm (¼ inch) thick.
- 05Heat a tava or heavy-bottomed frying pan over high heat. Place a naan onto the hot pan for a few seconds to lightly brown one side.
- 06Transfer the naan to a baking tray, seared side down, and place it under the hot grill for 2-5 minutes. Watch closely as it puffs up and develops characteristic char spots.
- 07Remove from the grill and immediately brush generously with melted butter. Serve warm.
