Hot Pot for One 白菜と豚バラの一人鍋 – ‘Midnight Diner: Tokyo Stories
A comforting and simple Japanese hot pot, perfect for a cozy meal for one. Featuring napa cabbage, pork belly, tofu, and enoki mushrooms simmered in a rich katsuo dashi.

- katsuobushi (dried bonito flakes)10 g
- water480 ml
- napa cabbage2 leaves
- sliced pork belly4 slices
- medium-firm tofu60 g
- enoki mushrooms60 g
- sake2 tsk
- Ponzu0 to taste
- Shichimi Togarashi (Japanese seven spice)0 to taste
METHOD
- 01Gather all the ingredients.
- 02To Make Katsuo Dashi: Boil water in a medium saucepan. When boiling, add katsuobushi.
- 03Cook for 15 seconds. Turn off the heat and let the katsuobushi infuse for 15 minutes. Strain the katsuobushi and set aside.
- 04To Make Hot Pot: Cut the napa cabbage into smaller pieces.
- 05Cut and discard the bottom of enoki mushrooms. Cut the tofu into smaller ½” slices. Cut the pork belly slices into halves or thirds.
- 06Place the ingredients in the donabe (earthenware pot) and pack nicely. Pour Katsuo Dashi and sake.
- 07Cover the lid and bring to simmer. Skim the foam and scum with a fine mesh skimmer. Cook for 5 minutes and serve immediately with Ponzu and Shichimi Togarashi.
