Tekone Sushi Marinated Tuna Rice Bowl

- sashimi grade raw tuna500 g
- mirin1 msk
- cooking sake1 msk
- soy sauce3 msk
- sushi rice700 g
- shiso perilla leaves3 leaves
- sesame seeds1 msk
- sushi ginger0 to taste
- kizami shredded nori seaweed2 msk
METHOD
- 01Mix the mirin, cooking sake, and the soy sauce in a small saucepan and put on medium heat. Once it starts to simmer, reduce the heat to medium-low and allow to simmer for about 5 minutes. This will help cook off the alcohol and thicken the marinade. Allow the marinade to cool completely.
- 02Slice the tuna into small, bite-sized pieces. In a bowl, combine the tuna and the cooled marinade. Allow to marinate in the fridge for 15-30 minutes.
- 03Prepare your sushi rice according to your preferred method.
- 04When the sushi rice is ready, place it into individual bowls. Top with the marinated tuna. Slice the shiso perilla leaves into thin strips, and then top the bowls with the leaves, the sesame seeds, and place the sushi ginger on the side. Optionally, you can also top with some kizami shredded nori seaweed. Feel free to slightly mix the ingredients all together before enjoying.
