Spicy Bean Sprout Salad (ホットもやし)

  • bean sprouts340 g
  • toasted white and black sesame seeds1 msk
  • green onion/scallion, chopped1 msk
  • sesame oil, roasted2 msk
  • soy sauce1.5 tsk
  • Shichimi Togarashi (Japanese seven spice)1.5 tsk
  • kosher/sea salt0.5 tsk
  • freshly ground black pepper0.25 tsk

METHOD

  1. 01Gather all the ingredients.
  2. 02Bring a large pot of water to a rolling boil. Add the bean sprouts and cook for 1-2 minutes until crisp-tender. Be careful not to overcook.
  3. 03Quickly drain the bean sprouts in a colander, shaking well to remove all excess water.
  4. 04In a large mixing bowl, combine the roasted sesame oil, soy sauce, Shichimi Togarashi, salt, and black pepper.
  5. 05Add the warm, drained bean sprouts to the bowl with the seasonings and toss thoroughly to coat everything evenly.
  6. 06Sprinkle with toasted sesame seeds and garnish with chopped green onion, if desired. Serve immediately or chilled.
