A personal take on Tuscan-style oblong meatballs, pan-fried to perfection and finished in a vibrant, zesty lemon sauce. A simple yet incredibly flavorful dish.

  • Parmesan cheese100 g

  • Flat-leaf parsley, finely chopped2 msk

  • Extra virgin olive oil3 msk
  • Butter30 g
  • Flour0 for dusting
  • Salt2 tsk
  • Freshly ground black pepper1 pinch

METHOD

  1. 01Peel and finely chop the garlic. Chop the parsley and grate the Parmesan cheese.
  2. 02In a bowl, combine the ground beef with garlic, parsley, egg, Parmesan cheese, salt, and pepper. Let the mixture rest for about 1 hour for the flavors to meld.
  3. 03Shape the mixture into oblong meatballs (approximately 24 pieces) and lightly roll them in flour, shaking off any excess.
  4. 04In a large frying pan, cook the meatballs in the butter and olive oil over low heat, covered, for about 30 minutes. Turn them often to ensure even browning.
  5. 05Finally, squeeze the lemon and pour the juice over the meatballs. Increase the heat. Once the sauce comes to a boil, the meatballs are ready to serve.
