METHOD
- 01Cook bulgur according to package instructions and let cool completely.
- 02Finely chop the parsley and mint. Dice the tomatoes. Combine the finely chopped herbs and diced tomatoes with the cooled bulgur in a large bowl.
- 03Arrange fresh romaine lettuce leaves at the bottom of a elegant serving dish. Spoon the tabbouleh mixture generously over the lettuce.
- 04In a small bowl, whisk together the lemon juice, extra virgin olive oil, and salt to form a simple yet bright dressing. Pour the dressing evenly over the tabbouleh just before serving.
