Baked Sweet Potato with Cottage Cheese and Feta Stir

- Crumbled feta cheese40 g
- Sun-dried tomatoes3 pieces
- Herbs de Provence0 to taste
- Flaky sea salt0 to taste

- Red onion0.5 medium
METHOD
- 01Wash the sweet potato thoroughly and prick holes all over with a fork.
- 02Place the sweet potato on a plate or in a microwave-safe dish and microwave on full power for 10 minutes.
- 03While the potato is cooking, prepare the filling. Finely chop the sun-dried tomatoes and crumble the feta cheese, then mix them together with the cottage cheese.
- 04Season the filling with Herbs de Provence, salt, and pepper to taste.
- 05Thinly slice the red onion and sauté over medium heat until it becomes soft and slightly browned, which makes it wonderfully sweet and caramelized.
- 06Carefully remove the hot potato from the microwave. Cut a cross-shaped incision into the top to allow it to 'open up'.
- 07Spoon the prepared filling into the opened sweet potato and top with the caramelized red onion.
