Baked Sweet Potato with Cottage Cheese and Feta Stir

A quick and delicious vegetarian dish featuring a microwave-baked sweet potato generously filled with a creamy, salty cottage cheese and feta mixture, all topped with sweet caramelized red onion. Perfect for a light lunch or a delightful side.

  • Cottage cheese125 g
  • Crumbled feta cheese40 g
  • Sun-dried tomatoes3 pieces
  • Herbs de Provence0 to taste
  • Flaky sea salt0 to taste
  • Black pepper0 to taste
  • Red onion0.5 medium

METHOD

  1. 01Wash the sweet potato thoroughly and prick holes all over with a fork.
  2. 02Place the sweet potato on a plate or in a microwave-safe dish and microwave on full power for 10 minutes.
  3. 03While the potato is cooking, prepare the filling. Finely chop the sun-dried tomatoes and crumble the feta cheese, then mix them together with the cottage cheese.
  4. 04Season the filling with Herbs de Provence, salt, and pepper to taste.
  5. 05Thinly slice the red onion and sauté over medium heat until it becomes soft and slightly browned, which makes it wonderfully sweet and caramelized.
  6. 06Carefully remove the hot potato from the microwave. Cut a cross-shaped incision into the top to allow it to 'open up'.
  7. 07Spoon the prepared filling into the opened sweet potato and top with the caramelized red onion.
